As we farewell another great Melbourne Summer (and probably the hottest in a few years), our thoughts turn to the heavier meals that warm us on the inside as the weather cools.
A chocolate cake in a mug is just the type of thing I look forward to as the days grow darker and cooler. Not officially a meal I know, but very like the sort I'd like to eat as a meal every day!
I am not a fan of cold weather in the slightest and so I seek solace from my old friend cocoa in his various forms, to comfort myself as I develop a dose of the Winter sookies.
So grab yourself a mini baking dish and get cooking this sneaky little emergency treat for yourself, then settle into the sofa with a good book and some fluffy slippers.
Here comes Autumn!
Into a microwave safe ramekin or large cup place:
4 tablespoons of flour,
4 tablespoons of sugar,
2 tablespoons of cocoa,
3 tablespoons of milk,
3 tablespoons of butter, margarine or cooking oil. (Add less if you feel guilty!)
Dash of vanilla essence,
Mix all ingredients together well and microwave for 3 minutes on high (or thereabouts depending on the power of your oven). Try adding some choc chips. Serve dusted with icing sugar.
