I haven't had a recipe post for some time on the blog. It's been pretty hot here in Melbourne this Summer. Admittedly I have been a rather lazy chef of late and the deli at Woolworths has never looked more appealing. I have been enjoying cold meats and prepared salads of the paid-for variety. Summer's like that. People should be outdoors and enjoying the weather and truth be told, anything prepared by someone else is always welcome when you have 6 kids.
When my Mother in Law, (Hi Janet if you are reading!), turned up on Boxing Day at a family get-together with this sensational salad, I knew I had a blog post in the making with zero effort on my part. (I took the photos okay!)
This is an old family recipe which has passed down from Janet's Mum, Gwen. Gwen passed away some time ago but her memory lives on in this stunning, fresh salad which I may have eaten a little too much of on the day. Greedy me!
This dish always makes a featured appearance at family gatherings and with Janet's permission, I am welcome to share it here.
1 green capsicum
3/4 cup of sugar
1 cup of white vinegar
3/4 cup of salad oil
1 teaspoon of celery seeds
1 teaspoon of dry mustard
salt and pepper to season.
Finely shred the cabbage and chop the onions and capsicum.
Place the cabbage in a bowl and top with onion and then the capsicum.
Sprinkle sugar over this but do not stir!
Boil the vinegar, oil, celery seeds, dry mustard and salt and pepper together and when slightly cooled pour over the cabbage salad ingredients and again, do not stir.
Refrigerate overnight and mix together before stirring.
A beautiful salad!
