Love the delicious taste of lemon poppy seed muffins? Here's a super-easy recipe to bake the sweetest, yummiest, lemon poppy seed muffins ever. The best part is, these are lower calorie muffins thanks to the addition of Lakanto all-natural sweetener.

Lemon Poppy Seed Muffins Recipe
For the muffins:
4 TBS coconut or almond flour
3 TBS powdered collagen
2tbs cassava flour
Half a cup of Lakanto Baking Blend
1/2 tsp baking soda
1/4 tsp baking powder
1/4 tsp salt
3 whole eggs plus one egg white
1/3 cup melted butter or ghee
2 TBS sour cream
2 and a half teaspoons of lemon juice
1 TBS poppy seeds
Half a tsp lemon zest.
Lemon Glaze (optional)
6 TBS unsalted butter
1 cup of Lakanto Icing Powder
1-2 tsp lemon juice
